How many times have I said that in the past? Too many to count. I AM, however, back on track and want to work hard to make this last push to lose the rest of my weight. I've seen a recipe floating around on the WW boards forever for crockpot beef tips. I finally gave them a try and it's delish!! If only I could get my DH to try them...he hates mushrooms and refuses to pick them out and enjoy the beef tips and wonderful gravy. Oh well, more for me...LOL!<br />

I went to the NC State Fair on Friday for the first time, probably, in over a decade! I did really well with eating while there (considering). I had an italian sausage with peppers and onions. I only ate 2/3 of it. I was told that I HAD to try Al's Fries, as they were "famous" in these parts, although I'd never heard of them. We hunted down the booth, and I ordered a small, which was much larger than a large order anywhere else. I must be honest, I wasn't that impressed. I only ate 1/2 of my order. Moving on to the roased corn on the cob...DELISH!! I wish I'd only eaten the corn and gave up the rest of it. Man, that corn was good!! That's it!! No more fair food, no deep fried anything! <br />

Then I came home, and it went to heck in a handbasket! I really wanted some ice cream, so stopped to get myself a cone while killing time before a candle party Friday night. When I got to the party, my girlfriend's boyfriend made a slammin' spicy dip, so in my mouth it jumps with a ton of chips too. BOO. There were also some mini brownies that somehow got onto my plate. Oh well, moving on.<br />
<br />
Saturday morning I did the Autism 5K with some of my WW buddies. That was great!! But I had another party (31 this time) and guess what?! Another bowl of spicy goodness with a ton more chips...and banana pudding! GEEZ! I found that I had no self control over the weekend and I know I will be UP on the scale this week. <br />
<br />
Oh, and let's not forget the World's Finest candy bars that I'm hustling for my cousin's twin girls. Yes, I've gotten into those too. WTH?! I've got to get recommitted and refocused. <br />

I stayed with her Friday night, met her beautiful two daughters, and made a new puppy friend, Holly. People, if you are on WW you really should utilize the message boards. I've made many friendships there, and find much support as well as motiviation. <br />

I can't believe it's been a YEAR since I posted! Sorry to leave you all hanging. I AM still around and still doing WW. I've been somewhat lazy this year, and have basically maintaned the same weight all year. I've recently made some changes and the scale is finally moving in the right direction. I guess what they say is true...the closer you get to goal, you self sabotage. This is definitely true with me. I was 23 lbs from goal and gained 13 lbs. UGH! I've since lost 7 of that, so it's all good. I think that getting back to blogging, posting every day (if possible) will help me get focused again. I've really missed it, and I see blogger has made some changes, so I'll have to catch up and maybe update the page a bit. Well, back to lunch, and I'll start posting pics maybe tomorrow. This is a Biggest Loser recipe and it's FREAKING awesome if
you like fresh ginger!!!<br />
<br />
1 tsp sesame, canola, or olive oil<br />
8 oz lean pork tenderloin (or skinless chicken breast or lean flank steak)
chopped<br />
1/2 red onion, thinly sliced<br />
2 TB finely chopped shallots<br />
2 TB peeled, finely chopped fresh ginger<br />
1/2 cup fat-free, low sodium chicken broth<br />
2 TB low sodium soy sauce<br />
1 TB dark molasses<br />
1 TB Szechuan seasoning mix<br />
1 cup cooked wild rice or brown rice<br />
2 cups steamed broccoli<br />
1 tsp toasted sesame seeds<br />
2 TB chopped cilantro<br />
<br />
Heat oil over medium high heat in a nonstick skillet. Add pork and cook until
lightly browned but not fully cooked. Remove to plate and cover.<br />
<br />
Add onion, shallots, ginger, and half of the broth to skillet. Simmer until
vegetables soften, 2-3 minutes. Add soy sauce, molasses, Szechuan
seasoning, and remaining broth. Bring to a simmer and return meat to skillet.
Simmer 3-4 minutes longer, until meat is just cooked through. Serve over hot
rice with broccoli. Garnish with sesame seeds and cilantro. <br />

Notes: If you aren't able to find Szechuan seasoning,

This is a Biggest Loser recipe
and it's SO good. I think I will add some spices to the tomato sauce the
next time I make it. <br />

8 slices center cut bacon, cut into 2" pieces<br />
1 1/4 cups finely chopped onions<br />
1 cup uncooked instant brown rice<br />
6 cups shredded green cabbage<br />
1 1/2 lb ground chicken breast or extra-lean ground beef <br />
1/2 tsp salt<br />
1/4 tsp ground black pepper<br />
2 cans (8oz each) no-salt added tomato sauce<br />
3/4 cup water<br />
hot sauce(optional)<br />
<br />
Preheat oven to 400 degrees. Lightly coat an 8x8 (at least 2 1/4"
deep)ovenproof glass or ceramic casserole or baking dish with olive oil
spray. Place large nonstick skillet over medium high heat. Add bacon and
cook 4-6 minutes per side, or until the edges start to crisp. Transfer
bacon to a plate lined with paper towel. Discard all but 1 TB bacon fat
from skillet. Add onions and rice to skillet and place over medium heat.
Cook, stirring 3-5 minutes, or until onions are tender and rice is
starting to brown. Spread 3 cups of the cabbage in an even layer on
bottom of prepared baking dish. Top with rice mixture, forming an even
layer. Add chicken, salt, and pepper to skillet and increase heat to
medium high. Cook chicken, breaking up with a wooden spoon, but leaving
some large chunks, until no longer pink, 3-5 minutes. With slotted
spoon, transfer chicken to baking dish to form another even layer.
Spread remaining cabbage evenly over chicken layer. Discard any liquid
from skillet and add tomato sauce and water. Turn heat to high and bring
to a boil. Spoon sauce evenly over the casserole. Lay bacon pieces on
top of cabbage. Cover dish with aluminum foil and bake 45 minutes.
Uncover and bake 10 minutes longer, or until cabbage and rice are tender
and strata is heated through. Let stand 5 minutes to set. Cut into 6
equal pieces and serve with hot sauce, if using.<br />
<br />
Notes: I only used 1 lb of ground chicken breast (which is plenty for this recipe). I also made this 4 servings instead of 6. WW Points Plus Value 8 for those who count. </td></tr>

12 oz uncooked spaghetti<br />
2 TB light stick butter<br />
1 (8 oz) package presliced mushrooms<br />
3 cups chopped cooked chicken breast<br />
2 (10.75 oz) cans condensed reduced sodium 98% fat free cream of mushroom soup<br />
2 cups reduced fat sour cream<br />
1/2 teaspoon freshly ground black pepper<br />
cooking spray<br />
1/3 cup grated parmesan cheese<br />
chopped fresh parsley (optional)<br />

Preheat oven to 350 degrees. Cook spaghetti according to package directions, omitting salt and fat. Drain. While pasta cooks, melt butter in a nonstick skillet over medium-high heat. Add mushrooms and saute' for 4 minutes or until tender. Combine pasta, mushrooms, chopped chicken, and next 3 ingredients. Pour chicken mixture into a 13x9 baking dish coated with cooking spray. Sprinkle with parmesan cheese. Bake at 350 for 55 minutes or until bubbly. Let stand 5 minutes before serving. Sprinkle with parsley, if desired.<br />

Woot! I went through about a 6 month period from Jan-June of this year and did what some call the Weight Watcher's dance. Up, down, up, down. I also slacked off on tracking and cooking at home. It was a struggle, and very frustrating at times, but I've stuck it out and now the weight is coming off again. I am more dedicated than ever, and am looking forward to a much healthier life! <br />

Ingredients <br />

1 1/2 cup(s) bell pepper(s), chopped (I used a mixture of red, green and yellow <br />
1 cup(s) (chopped) raw onion, chopped <br />
1/2 cup(s) celery, chopped <br />
4 oz canned mushrooms, drained and chopped <br />
1 pound(s) Oscar Mayer Natural beef franks, cut into coin size pieces (10 links) <br />
2 cup(s) Del Monte Diced Tomatoes With Basil, Garlic And Oregano, (use 1 - 15 1/2 oz can) <br />
8 oz canned tomato sauce, (use 1 - 8oz can) <br />
1 serving(s) 1 packet Sazon Tropicale seasoning <br />
3 cup(s) cooked brown rice <br />
Instructions <br />

Spray skillet with cooking oil. <br />
Saute peppers, onions, celery and mushrooms for 4 minutes. <br />
Add hot dogs. Sprinkle with Sazon seasoning. Mix well. Saute for 5 minutes. <br />
Add diced tomatoes and tomato sauce. Mix well. Cover and simmer for 20 minutes. <br />
Serve over brown rice. <br />

1 serving = 1 cup of hot dog mixture and 1/2 cup of brown rice<br />

*Notes* I used turkey hotdogs. The Sazon spice is sometimes sold at WalMart, but I had to order mine b/c I couldn't find it locally. This recipe is NOT a casserole. <br />

<li>½ cup chopped red bell pepper</li>
<li>3 eggs ¼ teaspoon salt</li>
<li>⅛ teaspoon ground black pepper</li>
<li>1 can (8 ounces) refrigerated crescent dinner rolls</li>
<li>1 cup frozen Southern-style hash brown potatoes, thawed</li>
<li>1 cup (4 ounces) shredded cheddar cheese</li>
<li>2 tablespoons grated Parmesan cheese</li>
<li>2 green onions, thinly slice</li>
</ul>1. Preheat oven to 375°F. Cook sausage and bell pepper in large skillet over medium-high heat 8-10 minutes or until sausage is thoroughly cooked, stirring frequently. Remove from skillet; drain. <br />
2. Beat eggs, salt and black pepper in small bowl with wire whisk until well blended. Add to skillet; cook 2-3 minutes or just until set, stirring occasionally. <br />
3. Separate crescent dough into 8 triangles; press onto bottom and up side of 12-inch pizza pan to form crust, firmly pressing seams together to seal. Top with sausage mixture, potatoes, eggs and cheeses. <br />
4. Bake 10-15 minutes or until crust is golden brown. Sprinkle with onions. Cut into 8 wedges to serve. <br />

*Notes* I used Jimmy Dean Turkey Sausage crumbles (entire bag) instead of the tube sausage. It's pre-cooked. I also used refrigerated hashbrowns, Simply Potatoes, instead of frozen.<br />

I know I've been AWOL for some time now, but I am still plugging away and trying to lose this weight! I was excited and wanted to share my new find. I love meatloaf and my hubby does too, but if I make it with anything other than beef he won't touch it, so I end up throwing half of it away b/c I can't eat it all before it goes bad. Are you with me? Well, it's been a busy one! Saturday morning was weigh in (down 1.4 lbs) and it was a good one. Only 2 lbs left of "cruise weight" left to lose, then to move onward! Saturday was also Race For The Cure 5K walk. About 30,000 people were there, which is about 5,000 less than last year. Another great experience, although HOT HOT HOT! I was pretty useless for the rest of the day! Today was church with my Granny, and then a good lunch out with the hubby! Hope you all had a wonderful weekend! I have a couple new recipes I may try this week. Let you know how all that goes!<br />
