Teriyaki Turkey Burgers

1 1/4 lb. lean ground turkey
1 TB ginger root, fresh, finely chopped
1 TB minced garlic
1 tsp sesame oil
1/4 cup teriyaki sauce
1/4 cup scallions, chopped
1 large egg white
2 TB cilantro, fresh, finely chopped
2 sprays cooking spray
4 reduced calorie hamburger rolls

Preheat a grill (or grill pan) to medium-high.

In a large bowl, combine turkey, ginger, garlic, oil, teriyaki sauce, scallions, cilantro and egg white; mix until just combined. Make for burgers, about 3/4-inch thick each.

Offheat, coat both sides of burgers with cooking spray.

Grill burgers, flipping once, until fully cooked, about 5-7 minutes per side. Lightly toast rolls on the grill.

Notes: The burger mixture will be extremely wet. I found it a bit difficult to form patties, but all the moisture is needed as lean meats can get very dry when cooked. Also, when the recipe says to coat both sides of the burgers with cooking spray...again this is difficult because of the burgers being so wet. I just used EVOO in the pan and it worked well.

Thai Turkey Burger and Broccoli Slaw Salad

1/4 cup fat-free mayo (I use light)
1 1/2 teaspoon grated peeled fresh ginger
1/4 teaspoon grated fresh lime zest
1 teaspoon fresh lime juice
1 teaspoon less sodium soy sauce
1 lb ground turkey breast
1/4 cup sweet chili sauce
1 1/2 tablespoons chopped fresh mint
cooking spray
4 light wheat hamburger buns (I use WW english muffins)
12 spinach leaves
12 slices english cucumber
8 slices red bell pepper

Prepare grill. Combine first 5 ingredients in a small bowl; set aside. Combine turkey and next 2 ingredients in a bowl. Divide mixture into 4 equal portions, shaping each into a 1/2 in. thick patty. Place patties on grill rack coated with cooking spray. Grill 4 to 5 minutes on each side or until done. Spread about 1 tablespoon mayonnaise mixture on bottom half of each bun; top each with 3 spinach leaves, 1 patty, 3 cucumber slices, 2 red bell pepper slices, and top half of bun.

4 servings
6 WW pts (for those of you who count)

Notes: The spinach I do put on the burger, but I serve the cucumber and pepper slices on the side b/c the mayo mixture makes things a little slippery when you bite into the burger.

Broccoli Salad

1/4 bag of broccoli salad
1 tablespoon light may0
splash of apple cider vinegar
1 packet splenda

Mix all ingredients well, and serve. Very yummy, and a great way to get some veggies in.

Black Bean Burger



Now that's what I call a burger!!!! Man this joker was good, and VERY filling!! I was watching Sandra Lee on Food Network and saw her whip these up. I had to try them for myself! You should too!!!

Black Bean Burgers

recipe by Sandra Lee (Food Network)

1/2 medium yellow onion, chopped

1 TB garlic, chopped

2 (15 oz)cans of black beans, rinsed and drained, divided

2 TB fresh cilantro, chopped

2 tsp fresh parsley, chopped

1 egg

1/2 tsp red pepper flakes

1/2 cup breadcrumbs

salt and fresh ground black pepper

4 hamburger rolls

Heat a grill or grill pan over medium low heat. In a food processor, pulse onion and garlic until finely chopped. Add 1 can of black beans, cilantro, parsley, egg, and red pepper flakes and pulse to combine. Transfer mixture to a large mixing bowl, add the remaining can of black beans and the bread crumbs. Season with salt and pepper, to taste, and mix until well combined. Divide into 4 portions and form patties. Place on hot oiled grill over medium low heat and cook about 6 mintues a side or until heated through. Toast hamburger buns on a grill. Place burger on top of each bun. Top with lettuce, tomato, and ketchup. Cover the burgers with the top of the bun and serve.

Notes: I served my burgers on Arnold's sandwich thins instead of hamburger buns saving myself points. I also didn't use any lettuce or ketchup. Just the burger and the Arnold's thin was fine with me. Makes 4 really big burgers.
