Back On Track....(AGAIN)

Back on track. How many times have I said that in the past? Too many to count. I AM, however, back on track and want to work hard to make this last push to lose the rest of my weight. It's a LONG and HARD journey, but it will all be worth it in the end.

I've seen a recipe floating around on the WW boards forever for crockpot beef tips. I finally gave them a try and it's delish!! The actual recipe I used was http://www.laaloosh.com/2012/10/10/beef-tips-in-mushroom-sauce-crock-pot/. Her recipes are awesome so give them a try! I served my beef tips over no yolk egg noodles. YUMMO!

If only I could get my DH to try them...he hates mushrooms and refuses to pick them out and enjoy the beef tips and wonderful gravy. Oh well, more for me...LOL!

Moo Shu Beef Lettuce Cups



Moo Shu Beef Lettuce Cups
cooking spray (I used EVOO)
4 oz. uncooked lean ground beef (with 7% fat)
1/4 cup thinly sliced yellow onion
2 tsp minced fresh ginger root
2 tsp minced garlic
1/4 cup thinly sliced bok choy
1/2 cup thinly sliced red bell pepper
1/2 cup thinly sliced button mushrooms
2 tsp low sodium soy sauce
2 leaves bibb lettuce

Coat a large nonstick skillet with cooking spray and set pan over medium-heat. Add beef, onion, ginger and garlic; cook until beef is browned and onion is soft, breaking up meat as it cooks, about 5-7 minutes. Add bok choy, pepper, mushrooms, and soy sauce; cook, stirring occasionally, until bok choy is wilted and pepper is tender-crisp, about 3-5 minutes. Spoon about 1/2 cup of beef mixture into each lettuce leaf.

Chili Cookoff Chili



1 lb. 93% lean ground beef
1 15 oz can of crushed tomatoes
1 8 oz can tomato sauce
1 TB vinegar
few squirts of ketchup (I used 2 TB)
1/2 tsp salt
1 medium onion, chopped
3-4 TB of chili powder
1 15 oz can kidney beans
hot sauce to taste, if desired

Brown ground beef, drain fat. Add all other ingredients; bring to a boil. Reduce to simmer for about 3-4 hours, until desired consistency.

**This recipe came from the WW online message boards. I'm sorry that I do not have tbe original posters name, for credit. Original poster also noted that the recipe is definitely edible in an hour.**

Makes 6 servings, 1 cup servings
