Black Bean Burger



Now that's what I call a burger!!!! Man this joker was good, and VERY filling!! I was watching Sandra Lee on Food Network and saw her whip these up. I had to try them for myself! You should too!!!

Black Bean Burgers

recipe by Sandra Lee (Food Network)

1/2 medium yellow onion, chopped

1 TB garlic, chopped

2 (15 oz)cans of black beans, rinsed and drained, divided

2 TB fresh cilantro, chopped

2 tsp fresh parsley, chopped

1 egg

1/2 tsp red pepper flakes

1/2 cup breadcrumbs

salt and fresh ground black pepper

4 hamburger rolls

Heat a grill or grill pan over medium low heat. In a food processor, pulse onion and garlic until finely chopped. Add 1 can of black beans, cilantro, parsley, egg, and red pepper flakes and pulse to combine. Transfer mixture to a large mixing bowl, add the remaining can of black beans and the bread crumbs. Season with salt and pepper, to taste, and mix until well combined. Divide into 4 portions and form patties. Place on hot oiled grill over medium low heat and cook about 6 mintues a side or until heated through. Toast hamburger buns on a grill. Place burger on top of each bun. Top with lettuce, tomato, and ketchup. Cover the burgers with the top of the bun and serve.

Notes: I served my burgers on Arnold's sandwich thins instead of hamburger buns saving myself points. I also didn't use any lettuce or ketchup. Just the burger and the Arnold's thin was fine with me. Makes 4 really big burgers.
