Happy MLK day!!

I've been a bit lazy about cooking things for breakfast lately, so this morning I got up and made one of my favs. A super great stand by breakfast to go.


Mini spinach quiches

Lunch was the last serving of Taco Soup. I ate some tortilla chips with the soup, although it was only about 10 chips so less than half of a serving.

Snack- Berry and yogurt smoothie.


Chobani vanilla yogurt and frozen berries from Trader Joe's


I also added some unsweetened almond milk and splenda.


Wasn't very hungry for dinner, so a simple bowl of Special K blueberry did the trick.

Snack- Vitatop multigrain
